Stu’s Stew

Cooking time: 15 minutes

Ingredients:

1 container (24 oz) of Minestrone soup, found in the deli refrigerated section

2 cans (15 oz) diced tomatoes

1 can (15 oz) black beans

1 package (12 oz) frozen meatless crumbles (Morning star, Boca, Simple Truth...)

1 package (12 oz) frozen mixed vegetables

1 jar pasta sauce (or tomato sauce, or tomato paste)


Add all ingredients to a large pot and heat. As it warms up add spices of your choice. For example, to get a smoky flavor add ½ teaspoon of liquid smoke and ¼ cup of hickory barbeque sauce.


The above list of ingredients results in a great meal, but feel free to experiment by adjusting their relative proportions. This is a very forgiving recipe, so you can’t go wrong! Alternatively you could saute an onion in the pot before adding the ingredients, or add cooked potato chunks or add plant-based sausages, or cooked rice, lentils, or barley.  Top with dairy-free cheese shreds.
