Mushroom Philly

Ingredients

(serves two)

1 large onion

3 Portobello caps

1 red bell

1 green bell

Vegan cheese

Hoagie rolls

Olive Oil

Sugar (if desired)

 

Instructions

Slice and sauté onions over med/med high heat for 7-10 minutes until lightly browned. Turn heat to med/low and let sit for upwards of 1 hour, until they look caramelized. If you like a bit of sweet, sprinkle a teaspoon of sugar over top. Only stir every 10 min.

 

Heat 1 teaspoon of olive oil in a separate pan. Slice and sauté mushrooms and bell peppers until mushrooms have released most of their liquid.

 

Add the caramelized onions to the mushroom/pepper pan. Sprinkle desired amount of cheese over the top and let it sit to melt.

 

Add veggie mixture to hoagie rolls and Enjoy!
